makes 1 loaf tin

Breakfast meets dessert meets comfort food in this recipe. High in protein, fibre and just very delicious all round.


  • 200g oats
  • 60g sesame (or any other seeds you like)
  • 50g buckwheat (or almond) flour
  • 1 tsp baking soda
  • tiny pinch of sea salt
  • 50g maple syrup (or honey)
  • 2 eggs
  • 75g coconut oil


  1. Preheat oven to 180C.
  2. Mix everything together in a bowl.
  3. Line your loaf tin (mine was fairly large) with parchment paper
  4. Take ⅔ of your oat mix and arrange evenly in a tin, lightly pressing together (but not too much, we are not in a brick making business here).
  5. Top up with approx. 200g of mixed frozen berries.
  6. Scatter remaining oat mix on top.
  7. Bake for 20-23 minutes, you want it baked through but not dried out.
  8. Enjoy straight out of the oven.
